The ability when making payment selection for a single vendor to split separate the payments so i can get multiple payments instead of one bulk payment. I always like for my cash register to look like my bank register.

Have you tried the 'Remit to alternate address' feature?
Once the various remit to's are set up, you can assign them to invoices on the A/P Payment Selection page. Just click the magnifying glass icon to view the invoice. Click the More Information button and you can select a different remit to address there.
The system will segregate the invoices out into separate checks when they have different remit to addresses.
